Seasoning Guide: Start with the listed baseline amounts, then adjust gradually after tasting. Fine-tune salt, sugar, acid, and finishing oils in small increments.

Slice Beef and Marinate
Slice the beef thinly. Add soy sauce, dark soy sauce, cornstarch, and oil. Mix well and marinate for 15 minutes.

Add Soy Sauce And Oyster Sauce
Add Soy Sauce, Oyster Sauce, and Cornstarch.

Add Cooking Oil
Add Cooking Oil. Coat the ingredients evenly and marinate for 30 minutes. Add Beef.

Prepare Bean Sprouts and Chives
Prepare the other ingredients: wash the bean sprouts, cut the yellow chives into segments, cut the scallion whites into segments, and slice the scallion greens into rings.

Toss Ho Fun with Oil
Drizzle a little cooking oil over the ho fun rice noodles and toss gently to prevent them from sticking together during stir-frying.

Prepare the Sauce
In a small bowl, combine salt, a tablespoon of soy sauce, and half a tablespoon of dark soy sauce. Stir well and set aside.

Sear Beef Over High Heat
Heat a generous amount of cooking oil in the wok over high heat. Add the beef and stir-fry rapidly until about 60% cooked, then remove and drain.

Stir-fry Vegetables and Ho Fun
Add scallion whites, bean sprouts, and yellow chives to the wok. Stir-fry until fragrant, then add the ho fun and toss until evenly combined.

Return Beef and Add Sauce
Return the seared beef to the wok. Pour in the prepared sauce and toss until the color is uniform. Use a wok-tossing motion or chopsticks to mix.

Add Scallion Greens and Serve
Sprinkle in the scallion greens, toss briefly until combined, and transfer to a plate.
