Mix Flour with Yeast
Add salt, sugar, and dry yeast to the flour. Mix the dry ingredients together.

Add Warm Water to Dough
Gradually add warm water in small amounts while stirring, until the mixture forms a shaggy dough.

Prepare Spices
Prepare the aromatic spices for braising the pork.

Blanch and Caramelize Pork
Cut pork belly into chunks and blanch in boiling water. Heat oil in a wok, add rock sugar and melt over low heat until amber-colored. Add the blanched pork and stir-fry to coat with caramel.

Braise Pork in Rice Cooker
Transfer the caramel-coated pork to a rice cooker. Add water to cover the meat, along with salt, ginger slices, and scallion segments. Press cook and after it finishes, keep warm for another 30 minutes.

Divide the dough into evenly sized portions.

Pan-fry Flatbreads Until Golden
In an electric griddle or dry skillet without oil, place the rolled flatbreads and cook about 3 minutes per side until golden brown on both sides.

Remove Braised Pork Belly
Take out the braised pork belly from the rice cooker. The meat should be very tender and easy to shred.

Chop Cilantro
Chop the cilantro into small pieces.

Assemble Rou Jia Mo
Cut the cooked flatbread open from the middle. Stuff with the chopped braised meat, then drizzle with a spoonful of the braising liquid—this is the soul of rou jia mo.
